Martín Berasategui brought a fresh culinary style, rich in products from Navarra, from his base in Lasarte to the Baluarte. The San Sebastian chef ensured us that he still enjoyed cooking as much as he did on his very first day and encouraged professionals to transmit the experience attained over the years.
Berasategui placed special emphasis on the creative element, which he inevitably related to respect, humility and hard work. “The professional who does not base him or herself on these ideas simply does not exist”, the chef emphasised.
