
International "Vive las verduras" Congress
The experiences of the architect Eduardo Souto de Moura and the chef Martín Berasategui allowed those attending the Baluarte to observe and participate in a fluent colloquium which demonstrated the close relationship between two arts so distinct as cookery and architecture.
The danger of minimalism, which runs the risk of losing itself in opportunism in both disciplines, was one of the central subjects of the conference. “It would seem that if you don't talk about minimalism, then you are not a chef”, stated Berasategui, who ensured us that the last thing he looks at when it comes to a dish is whether it looks good on a plate. “The first thing is the palate”, he indicated, “but it is also true that such work deserves an artistic touch”.
Both the architect and the chef were optimistic about the future of their trades, although they coincided that only time will tell.
