
International "Vive las verduras" Congress
On the last day of the congress, Adrià and Eisenman were given the job of reflecting upon the relationship between the fields of gastronomy and building as part of a colloquium. Or should we say a colloquium on deconstruction, which formed the backbone of the explanations given by both.
Adrià started his discourse by stating that this culinary movement began in 1996-1998 with “reconversions”: “an adaptation of traditional dishes to my cuisine and which marked the first step of Spanish nouvelle cuisine”. While Adrià’s deconstructionism is based on the transformation of a dish and its textures into other new ones through novel techniques, reconstruction prevails at the beginning in the technique invented in order to create new dishes from such a basis. And, finally, it supposes “the supremacy of advancement as an ideological attitude”.
Eisenman confirmed that “the evolution of Spanish culture is extremely interesting” and that it has taken place through two disciplines: “film and cuisine”. He wound up indicating that, on occasions, some terms are confused: “Architecture, like cuisine, has nothing to do with day-to-day life. We need paella in order to turn Adrià’s work into something important”.
