Combinations from the vegetable world with 'rotten' products

Alex Atala / DOM

Alex Atala made those attending concentrate on the presence of the process of decomposition or putrefaction in gastronomy. Wines, cheese, yeast, etc. Hailing from a unique land, Brazil, Atala described his local environment, including the Amazon rainforest, as a veritable “breeding ground” of new flavours.

Atala brought a cheese based on his study of the fermentation process made entirely from chestnuts to the Congress.
