The Basque chef, Hilario Arbelaitz, used five dishes to demonstrate how foie gras can be married with vegetables. Arbelaitz indicated that “vegetables give foie gras the freshness it needs without it losing the authentic pleasure of its taste”. He also pointed out that foie gras “is as Navarrese a product as vegetables are”, a fact confirmed by the presence of Joseba Martikorena from the company Martiko.
