The marriage of vegetables

David Yárnoz, from Molino de Urdaniz; and Luis Miguel Sanz, manager of the La Carte des Vins Wine Merchants, explained the keys to choosing a wine to accompany vegetable dishes.

“Such marriage depends on taste. The important thing is to experiment because you cannot generalise about a thing like harmony. Each wine needs to be defined precisely, because each has its specific peculiarities, which it doesn't even share with others from the same range”. In general, “the acid components of vegetables alter tastes and the tendency is to choose a wine which eliminates taste from the mouth”.

Both Yárnoz and Sanz, however, seemed more determined to seek out “love at first sight between the two, a combination to enrich the two products”. By means of example, they chose a Gewürztraminer for artichokes, a Lenz 2005 Riesling for peas and a Caudalia 2004 Viura for asparagus.
