Presented by the gastronomy expert and critic Caius Apicius, Manolo de la Osa explained how, both traditionally and in the present day, vegetables have been sought out from among the wild flora in order to make up for their scarcity in La Mancha, an area better suited to meat farming and cheese production than vegetable farming.
De la Osa introduced Pamplona to “Green vine shoots in brine”, which quite literally and graphically consists of the pleasure of tasting the vine’s most succulent branches.
