There are thousands of varieties of tomato, of different colours, shapes and sizes, but it is factors such as the type of seed, the soil and the method of growing which determine their quality.

The Navarrese chef, Koldo Rodero, insisted that it was not the best time of the year for tomatoes. Nevertheless, this was no obstacle for a man obsessed with “the quality of the product”, as he defined himself, and he prepared a peculiar, delicate plate of ham, egg, chips and tomato.
