Sobral brought vegetables from the other side of the Iberian peninsula to Pamplona: Portugal’s most typical vegetable, including turnip tops and Portuguese cabbage. In addition to these well-known ingredients from Portuguese cuisine, the restaurateur from Terreiro do Paço also showed new varieties being introduced to the kitchen as part of his presentation, such as samphire, which, while not typical of Portugal, is now being grown there and showing good results. He also introduced us to purslane, which is the land plant richest in fatty acids and is mainly used for soups. A veritable showcase of regional Portuguese cuisine with a few contemporary adaptations.
