
International "Vive las verduras" Congress
Salad was the star of the congress on Tuesday. Or perhaps we should say salads. Up to 80 different types of salad were made up for a tasting in which 500 portions of this highly versatile dish were served. The Italian Matteo Torretta, understudy at the Martín Berasategui restaurant, won the Florette award for the best salad with his spinach, blended fennel and crunchy Roquefort dish.
