
II International "Vive las verduras" Congress
Alvin Leung gave a demonstration of his spontaneity by improvising a series of dishes with ingredients he bought on a visit to the local markets and shops around the conference centre. He was looking for vegetables from his own country, China, but he had to work with what was available, thus producing some artichokes and asparagus “with a little Chinese touch”. This is hardly surprising because in his restaurant, Bo Innovation - one of the most renowned in Hong Kong and in fact in the whole country - he serves meals inspired by Eastern (Japanese) and Western (France) cuisine, with a particular focus on rice in its numerous varieties, and foie gras.
