
II International "Vive las verduras" Congress
Edorta Lamo and Iñigo Cojo, from the San Sebastian bar “A Fuego Negro”, showed us some new ways of presenting their vegetable recipes, always in the form of tapas, a genre in which in just a very short time they have introduced some spectacular innovations. They presented shot-glasses, cups and toast-toppings which, based on their in-depth knowledge of the physical and sensorial properties of everyday products, achieve some really elaborate textures such as liquids, gels and emulsions which allow fresh uses of fruit and vegetables, such as a cream of pumpkin which coexists with, albeit without encroaching upon, ginger and orange juice in an artifice of densities.
