Ferrán Adriá revealed some of the innovations that will be appearing on this year’s menu at his restaurant, El Bulli, though typically the man regarded as the greatest chef in the world did not reveal the secrets that have required countless hours of experimentation using cutting-edge techniques and research into new products and textures. He cited a praline of basil and a tomato cookie without sugar or flour, demonstrated dry extracts of various products that are magically transformed when mixed with just a drop of water, and amazed us with the announcement of an alphabet soup in which the soup is inside the letters. He also demonstrated some liquid peas and dwarf mandarins which could pass for filled sweets, yet in fact are simply exactly what they are – mandarins peeled a few hours before consumption.
