The Portal de Echaurren restaurant places a lot of importance on actual cooking techniques, without relinquishing technical appliances - indeed, they use machines in various processes - though to a large extent they follow traditional methods when it comes to preparing their dishes. Hence, their ingredients are recognisable in every culinary guise in an exercise of honesty and respect towards the people who, according to Francis Paniego, are the most important customers at his establishment: the 2,000 inhabitants of Ezcaray. One example of his concern for flavours is vacuum cooking, which offers outstanding results when used with vegetables.
