Isaac Salaberria, from the Fagollada Restaurant in Hernani, based his culinary concept on peas. He pointed out that this is a delicate vegetable and in order to preserve the natural texture and flavour of this almost-wild product you need to adhere to very precise cooking times: "The best way to preserve their natural characteristics and aroma is with minimal cooking; you need to eat them almost raw, because otherwise you’re taking away their natural essence and, in culinary terms, that would be taking a step backwards". He pointed out that whatever you add to peas, just like other natural products, should enhance them rather than disguise them or cover up their flavour.
