Memories of the countryside and beaches - the vegetables of my childhood

José Avilez is one of the leading instigators of the revival of Portuguese cuisine and his Lisbon restaurant, El Tavares, is at the forefront of using the latest culinary techniques, allowing him to play with textures in creations inspired by traditional Portuguese recipes in which fish plays the leading role. His ideas also aim to arouse the diner’s senses, and to demonstrate this he brought to the Conference some clams in a gelatinous stock accompanied by crunchy milled bread, the idea being to evoke both the sea and the sandy beach.
