Juan Gutiérrez, along with Fernando García del Moral, gave a presentation on RAF tomatoes which emerged a decade ago to challenge the fungal plague ruining the harvests in the greenhouses of Almeria. Hence their name - Resistant to Fusarium (RAF in the Spanish version). This high quality tomato is very expensive as it is grown from pure seeds with a low production output; various cheaper versions have appeared on the market but they are of a much lower quality. As it contains much less water, the RAF tomato has a more intense flavour and enhances the traditional dishes of Andalusian cuisine such as gazpacho, salmorejo, salpicon and pipirrana salads and numerous stews.
