Nicola Portinari has managed to turn his restaurant, La Peca, into one of the most renowned in northern Italy. He practices a modern cuisine yet rooted in the culinary traditions and history of his region, Vicenza, where land and sea meet, with new interpretations of the best dishes from Italian cuisine. His presentation at the conference featured asparagus from Cimadolmo and Fiolaro di Creazzo broccoli and was a demonstration of his creativity and expertise.
