"Peas, broad beans, goose eggs, charcuterie... natural products prepared simply was the gastronomic proposition of Stéphane Carrade from the Chez Ruffet restaurant in Jurançon (France), who titled his presentation "Market Garden Gastronomy". This contrasted with the gastronomic concepts put forward by the other speakers, and pointed to a return to traditional techniques. Carrade summed it up by saying that it was about "spontaneous cuisine made using products from the farm".
