Teresa Gil and Javier Losada from the Don Pablo restaurant in Pamplona opted for healthy cuisine based on quality products: ajoarriero (cod with oil, garlic and peppers) and vegetables. “If what you’re looking for is healthy cuisine, there can be nothing better than properly prepared vegetables and cod, which is virtually fat-free”, is their recommendation. They propose a warm salad of thinly-sliced cod, sliced asparagus and tomato stock, a light dish that is ideal for dieters and offers a fantastic combination of textures and flavours. They have also taken a fresh approach to traditional recipes such as ajoarriero, preparing an original cod carpaccio which reintroduces the fritada, enriched with nuts and presented with thin slices of bacon, green asparagus, vegetable sauce and grilled asparagus.
