More than forty major chefs, scientists and university professors took part in the Congress Navarra Gourmet-Live Vegetables, organised by the Government of Navarra, in collaboration with more than twenty organisations, companies, associations and denominations of origin, and held in Pamplona from the 18th to the 20th of May. The technical direction of the congress was headed by the gastronomic critic Rafael García Santos and the Navarrese chef Koldo Rodero.

Navarra Gourmet was a major international event (with the participation of speakers from 5 countries: Germany, China, Spain, France and Italy) which united resources and knowledge, innovation and traditional recipes. The official opening of the Congress, the speeches by Pedro Subijana and Martín Berasategui, the awarding of the Navarra Gourmet prize to the Frenchman Michel Bras and Ferrán Adriá's extraordinary intervention were moments of special interest for the public, which packed out the Chamber Hall at Baluarte. The programme of the III Navarra Gourmet Congress was peppered with the finest speakers of the moment: the public had the chance to listen to the head chefs from seven of the fifty best restaurants in the world.

Among the Spanish chefs who presented their finest dishes and recipes were the winners of the 2007 and 2008 ‘Reyno de Navarra’ prize, now called ‘Navarra Gourmet’: Ferrán Adrià and Martín Berasategui; not to mention Pedro Subijana, Josean Martínez Alija, Dani García, Quique Dacosta, Xavier Pellicer (Abac) and Ricardo Camarena (Arrop). In addition to chefs from Italy, France and Germany, the owner of the Beijing and Shanghai ‘Whampoa Club’, Jereme Leung, also visited Pamplona. The chef Willlian Ledeuil gave a novel presentation on “oriental vegetables and particularly Thai vegetables”.

Representatives from Navarrese establishments also took part as speakers: Café Niza, Rodero, Alhambra, Maher, El Molino de Urdániz, Treintaitrés and Túbal. The congress' lectures got under way with local man Iñaki Rodaballo, Fernando Pérez Arellano (Zaranda-Madrid) and Valeria Piccini (Caino-Montemerano), who spoke about legumes from central Italy.
