A chef devoted to vegetables
The Italian-Argentinean chef, Mauro Coagreco, represents positive globalisation. Mirazur, the one-star Michelin restaurant owned by this young, French-trained chef is located on the border between France and Italy, offering a modern cuisine entirely dedicated to vegetables. This is so much the case that there is no red meat on his menu although, from time to time, he does include some meat, primarily pigeon, for those wanting a more complete repast.
As the chef was unable to attend the congress, he was represented by his assistant Denny Imbroisi. "Coagreco's cuisine is basic, simple and flavour enhancing", he explained. To demonstrate this, he prepared three simple dishes: a salad of Liguria-grown asparagus, white asparagus with cream of hazelnuts, and little vegetables, all fresh dishes to enhance the bitter, acid and sweet flavours and dressed with flowers.
The majority of the dishes are prepared with natural products gathered from the restaurant allotment, together with a sprinkling of aromatic herbs. "All these ingredients, except for the potatoes and onions, come from our allotment, but we shall shortly be planting these vegetables as well", indicated Imbroisi.
