Vegetables for breakfast
Daniel Guevara and Johan Schmutzer, assistant chefs to Thomas Bühner at the La Vie restaurant in Osnabrück, demonstrated two of the vegetable dishes which have made this two-star Michelín restaurant famous.
"We always serve an all-vegetable dish before the main course", explained Guevara, representing the restaurant on behalf of Bühner who was unable to attend the congress. As an example, he cooked an original "Vegetable Muesli", a dish reminiscent of the typical German breakfast but made with vegetables such as celery, parsley, carrots and herbs. The vegetable flakes and nuts are presented in a cornet and served together with a bowl of very cold milk.
Guevara and Schmutzer also prepared a traditional German dish of leg of veal and vegetables in which the meat is cooked for two to three hours and served with the cooking juices and vegetables.
