Form the very outset, one of the objectives of Navarra Gourmet was to get the public involved and to form part of this festival of gastronomy by delving into our culinary roots and rediscovering local products. That is why, this tribute to our Historical Recipe Book was one of the most popular events at the congress.

Emblematic dishes from Navarrese gastronomy were prepared in ten kitchens specially set up for the occasion in Baluarte's "Muralla" Room and then sold at affordable prices. Five of these ten kitchens were devoted to our vegetables and the cuisine of Navarra's Ribera region, preparing dishes such as Asparagus from Navarra with oil, Spring onions; Lettuce hearts from Tudela; Artichokes from Tudela, Garlic shoots and Asparagus from Navarra in tempura; and "Menestra" of vegetables. The other five made such local favourites as Cod "al ajoarriero", "Pocha" beans, "Migas", Lamb from Navarra "al chilindrón" and "Costrada" from Aoiz.

These portions from the historical recipe book of Navarrese cuisine were warmly received by the general public, to such an extent that on the third day, Wednesday the 20th, the supplies of some restaurants taking part even ran dry.
